Event Description: 

The Spectrum Experience and Healthy Meal Planning & Exercise will identify the  health benefits of healthy eating and being physically active.

Presented by:

Monique Parris-Taylor has been practicing as a registered dietitian for more than 15 years. She is a Tennessee native who moved to Nashville in 2007. She has been actively involved with Autism Tennessee as a parent member and volunteer for 8+ years. She is a devoted, loving mother to her 12-year-old son, Warrick, who can light up a room with his smile and laughter. 


Joe and Vivian Rinaldo -  Juliet lost 107 pounds and has kept it off for 22 years! Her parents Joe and Vivian Rinaldo learned the TRUE meaning of balanced meals especially when dealing with food restrictions. Through experience they understand the value of exercises and know how to tailor a fitness plan for a child/adult that’s less communicative than the typical offspring as Juliet has Down syndrome. The 22 years of daily hands-on experience made Joe and Vivian skilled in health and fitness for kids/adults with Special Needs. 

Keeping 107 pounds off for 22 years doesn’t just mean losing weight. Joe and Vivian created an approach to fitness that lasts for years and years! Their approach can be easily customized to enable every family to reach their health and fitness goals. In fact, their methods work BEST when the entire family joins the program."

At the end of this workshop, participants will be able to:

  • plan healthy meals
  • know how to read food labels
  • identify health benefits of being physically active.
